Taco Breakfast Plate


A light and refreshing meal to enjoy for breakfast, lunch or dinner. This Taco Plate (or bowl) has plenty of protein, healthy fats, greens and antioxidants to fuel your day. 

Taco Breakfast Plate - Makes 4 servings (Gluten + Dairy Free)


1 lb Organic Ground Turkey

1 1/2 tsps Olive Oil

2 Tbsps Chili Powder

1 tsp Oregano

1 tsp Cumin

1 tsp Black Pepper

1/2 Cup Water 

4 Eggs (poached or fried)

4 cups Organic Baby Spinach

1 Organic Green Pepper (diced)

1 Organic Tomato (diced) 

1 Avocado (sliced) 


1. Heat a skillet over medium heat. Add olive oil. Add the ground turkey and break up the meat as it is cooking. Once the meat is cooked through, add the chili powder, oregano, cumin and black pepper. Add the water, saute for another minute and mix well. Add diced green pepper. Reduce heat to low and let taco mixture simmer until water is absorbed. Keep warm, while you prepare the eggs.

2. Poach or fry your eggs.

3. Divide the spinach, avocado, tomato, egg and taco meat on to each plate or bowl. Add a side of salsa and enjoy!
