How you start your day, often sets the tone for your eating habits. So choosing the right breakfast is key! One of my favorite breakfast foods is sweet potato toast. You are probably thinking... what? Sweet potatoes as toast?! Yes, sweet potatoes are an excellent source of fiber, folic acid, iron, potassium, and vitamins A, C, and B6. Toast it up with the right toppings (protein + healthy fats) and you will be off to a great start!
Some of my favorite sweet potato toast toppings:
- Banana + almond butter + dash cinnamon
- Mashed avocado + everything bagel seasoning
- Blueberries + almond butter + dash cinnamon
- Scrambled eggs + salsa
- Mashed avocado + radish slices + lime juice + dash red pepper
