A healthy grab-n-go breakfast (or snack) the whole family can enjoy! Made with whole food ingredients and filled with fiber, antioxidants, protein and healthy fats; these make a great alternative to store-bought muffins and other frozen breakfast goods. Your kids will love these!
Oatmeal Muffins (makes 12-14 muffins) Gluten + Dairy Free
1/4 cup coconut oil, melted
1 cup coconut sugar
1/4 cup avocado, mashed
1½ cups almond or coconut milk
2 tsp. vanilla extract
½ tsp. salt
1 tbsp. ground cinnamon
3 cups gluten-free oats (or regular)
2 tsp. baking powder
Your favorite toppings (berries, nuts, chocolate chips, etc.)
- Preheat the oven to 350 degrees. Line a muffin tin with muffin liners.
- In a large bowl, whisk the eggs, coconut oil and coconut sugar until sugar is dissolved. Add the avocado, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in the oats and baking powder.
- Fill the muffin tin with ¼ cup of the oat mixture in each muffin cup. Add your favorite toppings. Push the toppings down into the oat mixture with a spoon.
- Bake for 30 minutes. Let them cool for 5 minutes before eating. Serve in our Berry Patch Baking Dish or store in the refrigerator or freezer.
