With crisp greens, protein and healthy fats; these Asian Turkey Lettuce Wraps make for an easy weeknight meal or workday lunch. And if you are a fan of cooking once and eating twice, you can use the leftover filling and lettuce to make a quick and easy salad bowl.

Asian Turkey Lettuce Wraps, (Low-Carb, Gluten + Dairy Free), 4 Servings
1 tbsp Coconut Oil
1/2 White Onion (diced)
1 tbsp Ginger (peeled and grated)
1/4 tsp Black Pepper
2 Garlic (cloves, minced)
1 lb Organic Lean Ground Turkey
2 tbsps Tamari
1 Head Living Leaf Lettuce (peeled apart into leaves and washed)
2 Stalks Green Onion (chopped)
1 Cup Matchstick Carrots
1/4 Cup Raw Peanuts (chopped) or Sesame Seeds
1 Lime (sliced into wedges)
1. Heat coconut oil in a large skillet over medium heat. Add in the onions, ginger, and pepper. Saute for about 5 minutes. Add in the garlic and saute for another minute.
2. Add in the ground turkey and break it up as it cooks. Once it is cooked through and browned, add in the tamari. Continue to saute until it is absorbed. Remove from heat.
3. Spoon the turkey mixture into the lettuce leaf and top with green onion, carrots, peanuts and a squeeze of lime. Wrap and enjoy!
